Everyone loves banana bread! Now you can enjoy the delicious banana flavor in a healthy way!
- 1/4 cup Purely Inspired® Organic Protein
- 1 cup whole wheat flour
- 3/4 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 cup plain Greek yogurt
- 2 eggs
- 2 large bananas, mashed
- 1/2 cup milk of choice
- 1/2 tsp. vanilla extract
- Optional: nuts (almonds, walnuts or pecans), fruit (strawberries or frozen cranberries)
- Mix dry ingredients together in a mixing bowl.
- Add in Greek yogurt, eggs, mashed bananas, milk and vanilla extract and stir well.
- If you want to add nuts or additional fruit, do so.
- Spray muffin pan with non-stick spray and pour batter into pan.
- Bake at 350°F for 25 to 30 minutes or until a toothpick is clean when stuck into the center of the muffins.
