Fall Vegan Pumpkin Pudding

  • 1 scoop Purely Inspired® Organic Protein
  • 2 cups raw cashews, whole
  • 3/4 cup canned pumpkin puree
  • 4–6 dates
  • 1/2 tsp. nutmeg
  • 2 tbsp. vegan butter
  • 1/2 tsp. cinnamon
  • Cold water


  1. Place cashews, pumpkin puree, dates, Purely Inspired® 100% Plant-Based Protein, butter, nutmeg and cinnamon in a high-speed blender or food processor with just enough cold water to cover the ingredients by half an inch.
  2. Blend for several minutes until completely smooth. You want a thick, pudding-like texture. If the mixture is too thick, simply add a bit more water until desired consistency is reached.
  3. Refrigerate until needed.
