Ingredients:
- 1 scoop Purely Inspired® Organic Protein
- 2 cups raw cashews, whole
- 3/4 cup canned pumpkin puree
- 4–6 dates
- 1/2 tsp. nutmeg
- 2 tbsp. vegan butter
- 1/2 tsp. cinnamon
- Cold water
Instructions:
- Place cashews, pumpkin puree, dates, Purely Inspired® 100% Plant-Based Protein, butter, nutmeg and cinnamon in a high-speed blender or food processor with just enough cold water to cover the ingredients by half an inch.
- Blend for several minutes until completely smooth. You want a thick, pudding-like texture. If the mixture is too thick, simply add a bit more water until desired consistency is reached.
- Refrigerate until needed.
