Peppermint Cocoa Protein Bites

Ingredients

  • 1 cup almonds
  • 1 scoop Purely Inspired Decadent Chocolate Organic Protein
  • Dash of salt
  • 1/2 cup almond butter
  • 8 dried figs
  • 2 oz dark chocolate
  • 1/2 tsp peppermint extract

Combine the almonds, protein powder, and salt in the bowl of a food processor and process until a powder forms (about 30 seconds). Next, add in the almond butter, dried figs, dark chocolate, and peppermint extract. Process until a dough has formed (about 60 seconds). Now, carefully remove the blade from the bowl and transfer the dough to a bowl. Roll the dough into 14 equal size balls. Then, if using, roll each ball in the crushed peppermints. 

Store your protein bites in a sealed container in the refrigerator for up to 2 weeks.
