No-Bake Thumbprint Cookies

Who said comfort food has to be unhealthy? If you’re looking for healthy alternatives to the typical comfort food, try these delicious high-protein no-bake thumbprint cookies with chia kam!

Ingredients:
Cookies:

  • 1 cup coconut flour
  • 1/2 tsp. cinnamon
  • 2 scoops Purely Inspired® Organic Protein, French Vanilla
  • 1/4 cup peanut butter
  • 1 cup milk of choice

Chia Jam:

  • 1 1/2 cups chopped fruit of choice (strawberries, peaches, apricots or raspberries work well)
  • 1 tbsp. chia seeds

Directions:

  1. Cook chopped fruit in the microwave for 2 minutes. Blend in a blender until smooth.
  2. Add chia seeds and set jam aside to cool.
  3. Combine all ingredients for cookies and mix well.
  4. Form the dough into balls. Press down the center of each cookie to make a small ditch that will be able to fit the jam.
  5. Fill each cookie with jam.
  6. Keep refrigerated for a firmer texture and enjoy!

Healthy Protein Fruit Crisp

When looking for a tasty dessert, finding ways to use real, whole fruit is always a tasty and healthy option. Try this healthy protein fruit crisp for a high-protein fruity dessert or snack!

Ingredients

  • 1/4 cup coconut oil
  • 1 scoop Purely Inspired® Organic Protein
  • 1/4 cup brown sugar, lightly packed
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 cup whole wheat flour
  • 1 cup old-fashioned oats
  • 6 cups of fruit, chopped (plums, peaches, cherries, apples, blueberries, raspberries, strawberries, pears, pineapple, etc.)
  • 1 tbsp. cornstarch

Directions

  1. Preheat the oven to 350℉ and coat a 9″ x 13″ pan with nonstick spray.
  2. Heat coconut oil for about 30 seconds in the microwave until melted.
  3. Combine all ingredients except for the fruit and cornstarch, and mix well.
  4. Combine the fruit and cornstarch, and add the fruit to the pan. Then top with crisp mixture.
  5. Bake for 35 to 45 minutes, or until the fruit mixture is bubbling and the oat mixture is crunchy.

Summer Fruit Baked Oatmeal

When it comes to eating right, you can never go wrong with fresh fruit, oatmeal and peanut butter. Combine all three of these with some tasty protein to give you a delicious summer fruit baked oatmeal treat!

Ingredients

  • 1 scoop Purely Inspired® Organic Protein
  • 3 cups old-fashioned rolled oats
  • 1 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 1/3 cups milk (I used vanilla soy milk)
  • 2 eggs, beaten
  • 1/4 cup syrup (I used light)
  • 1 1/2 cups of chopped fruit for topping (strawberries, peaches, plums and blueberries work well)

Directions

  1. Preheat oven to 375℉ and spray a baking dish with nonstick spray.
  2. In a bowl, combine all ingredients except for fruit and mix well.
  3. Pour into a baking dish and cover with aluminum foil.
  4. Bake in the oven for 15 minutes.
  5. Remove from oven, take off aluminum foil and top with fruit.
  6. Bake for another 10 minutes and serve.
  7. Enjoy! This can be topped with syrup and/or peanut butter.

Chocolate Chip Cookies

Chocolate chip cookies have always been a temptation for healthy eaters. Now you can make a version without derailing your clean eating routine – try these Purely Inspired® chocolate chip cookies!

Ingredients

  • 2 tbsp. Purely Inspired® Organic Protein
  • 2 tbsp. ground flaxseed
  • 1 tbsp. almond flour
  • 1 tbsp. xylitol
  • 1/4 tsp. baking powder
  • 1 tbsp. grass-fed butter, melted
  • 1 whole egg yolk
  • 1/2 tsp. vanilla extract
  • 2 tbsp. sugar-free chocolate chips

Directions

  1. Combine all dry ingredients in a small bowl.
  2. Add melted butter, egg yolk and extract.
  3. Mix thoroughly with a fork. The consistency should resemble a thick cookie dough.
  4. Gently stir in chocolate chips.
  5. Divide batter and mold into two spheres.
  6. Flatten each into a cookie shape and place on a lined cookie sheet.
  7. Bake at 350°F for 8 to 10 minutes or until golden brown. (I used a toaster oven.)
  8. Allow to cool. Freeze leftovers for a real treat!

Gluten-Free Peanut Butter & Jam Muffins

Everyone loves the classic peanut butter and jelly combination when it comes to sandwiches, but what about muffins? Try this delicious, new gluten-free PB&J muffin recipe made with Purely Inspired® 100% Plant-Based Protein!

Ingredients

  • 1 scoop Purely Inspired® Organic Protein
  • 1 cup peanut flour
  • 1 ripe banana
  • 1 cup egg whites
  • 1/4 cup date, chia and coconut mix

Directions

  1. Throw everything into a food processor and mix for about 2 minutes.
  2. May need to put non-stick spray on your spoon to transfer batter into muffin tins.
  3. Bake at 400°F for about 13 minutes.
